  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups of your favorite trail mix


Preheat oven to 350°F. Line baking sheet with parchment or baking mats and set aside.

Combine oats, flour, baking powder and salt in a bowl and whisk to combine. Cream butter and both sugars together until light and fluffy. Add eggs and mix until well combined. Add vanilla extract. Add the trail mix and gently stir until well mixed.

Drop dough on baking sheets in rounded tablespoons, about two inches apart. Bake for 11-12 minutes rotating half way through. Let trays cool for a few minutes and then carefully transfer the cookies onto wire racks to cool completely.
