Soba Noodle Salad

  • 2 bundles soba noodles, from 1 (500 gram) package
  • 4 tablespoons toasted sesame oil, divided
  • 1 tablespoon minced ginger
  • 1/4 cup honey
  • 1/4 cup creamy peanut butter
  • 3 tablespoons rice wine vinegar
  • 1/4 cup soy sauce
  • 1 1/2 teaspoons chili oil
  • 8 green onions, sliced
  • 1 cup shredded carrots
  • 1/2 cup julienne sliced red pepper
  • 1/2 cup chopped peanuts


Cook noodles according to package directions.
Drain and toss in a bowl with 3 tablespoons sesame oil.
Heat remaining oil in a skillet over low heat.
Saute ginger until softened.
Add honey and peanut butter and cook until melted.
Add vinegar, soy sauce and chili oil. Stir to combine.
Pour over noodles and toss to coat.
Stir in and garnish with green onions, carrots, pepper and peanuts.
