Roasted Asparagus with Red Pepper and Goat Cheese

  • 2 tablespoons olive oil
  • 2 pounds asparagus, trimmed
  • Salt and freshly ground black pepper
  • 1 cup roasted red peppers cut into strips (Olive Bar)
  • 2 tablespoons chopped fresh mint
  • 4 ounces goat cheese, crumbled
  • 1/4 cup pine nuts, toasted


Preheat oven to 400°F.
Combine asparagus, olive oil and salt and pepper in a large roasting pan.
Roast for about 10 minutes or until cooked to taste.
Combine with pepper strips and return to oven for a few minutes.
Sprinkle with goat cheese, mint and pine nuts.
