Pineapple Rice

  • 1 cup chicken broth
  • 1 cup pineapple juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup long grain rice (basmati or jasmine)
  • 2/3 cup diced fresh pineapple
  • 1/2 cup sliced green onions
  • 1/2 cup toasted, diced almonds (Bulk Foods)



Bring broth, juice, sugar and salt to a boil in a saucepan over high heat. Stir in rice. Cover, reduce heat to low and simmer until liquid is absorbed, about 20 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork. Stir in pineapple and scallions. Sprinkle with almonds and serve.
