- 1 stick butter, melted (1/2 cup melted)
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- 2 tablespoons freshly chopped flat-leaf parsley
- Kosher salt and fresh cracked black pepper
- 4 salmon filets (approx. 4-6 oz. per person)
- 4-5 minced garlic cloves
Preheat oven to 385°F.
Combine melted butter, lemon juice, soy sauce and parsley.
Place about 1 tablespoon of the melted butter mixture under each filet on a foil-lined sheet pan.
Season the filets with salt and pepper to taste.
Rub the garlic over the four filets. Gently top with remaining butter mixture (about 2 tablespoons each).
Cook in oven 12-14 mins or until desired doneness.
Note: After cooking, flip the filets skin-side up and remove the skin, if desired (scraping may be necessary if stuck to the foil). Broil the skins under high heat 2-4 minutes until crisp and crunchy like chip. Watch carefully as it can burn quickly –feel free to leave the oven door open slightly to make it easier. The skin will take on tasty flavors and is full of healthy Omega-3s.
