Mixed Greens with Pecans, Goat Cheese and Cranberries

  • 10 cups mixed baby greens
  • 3/4 cup dried cranberries
  • 1/2 small red onion, thinly sliced
  • Dressing:
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh thyme
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper to taste
  • 3/4 cup glazed pecans or walnuts
  • 3/4 cup goat cheese, crumbled


Mix greens, cranberries and onion in a large bowl.
In a small bowl, whisk vinegar, mustard, thyme, olive oil and salt and pepper to taste.
Pour over salad and toss gently.
Sprinkle with nuts and cheese. Serve immediately.
