Macerated Strawberries

  • 1 pound fresh strawberries, cleaned and sliced
  • 2 tablespoons granulated sugar (more if berries are little tart)
  • Squeeze of fresh lemon juice
  • 2 tablespoons Grand Marnier or orange juiceĀ (optional)


Combine all ingredients in a bowl. Let set at room temperature for 30 minutes or until the berries release their juices.
Serve over ice cream, pound cake, short cake or scones.

Or strain to use as a crepe or shortcake filling, reserving some syrup to drizzle over the top.


This method also works with other berries (raspberies, blackberries, blueberries) but they may require a little mashing.
