How to Roast Garlic

  • 2 whole heads garlic
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper


Preheat oven to 250°F.
Peel off any flaky, loose pieces of skin around head. Cut tops off garlic to expose cloves.
Place in a piece of foil large enough to enclose heads. Drizzle each head with 1 tablespoon oil and sprinkle with salt and pepper. Crimp foil all around heads to enclose.
Bake for 45 minutes to 1 hour, or until cloves are very soft and pushing up out of their skins.
Squeeze garlic out of skins or carefully pull cloves out of skins to keep intact. Spread on bread for a quick appetizer, or add to salads or sauce for a sweet, intense garlic flavor.
