Gluten-Free Anisette Toast

Ingredients

  • 2 eggs
  • 2/3 cup sugar
  • 1 teaspoon anise seed
  • 1 cup white corn flour or masa

Directions

Heat oven to 375°F.
Grease and flour a 9x5-inch loaf pan.
Beat eggs and sugar thoroughly.
Add anise seed.
Sift in corn flour.
Pack into prepared pan (pan will be half full).
Bake for about 20 minutes, or until toothpick inserted in center comes out clean.
Remove from pan and cut into sixteen 1/2-inch thick slices.
Place slices on a greased baking sheet.
Return to oven and bake for 5 minutes, or until bottoms of slices are browned.
Flip over and bake 5 minutes more, or until both sides are browned.
Cookies keep for several weeks stored in an airtight container at room temperature.

Variation: Substitute lemon or almond flavoring for anise seed, and add some chopped candied or dried fruit.
