- 1 cup drained sauerkraut
- 2 eggs, beaten
- 1/3 cup flour
- 1 cup chopped green onion
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- Oil for frying
Place sauerkraut between paper towels to remove excess moisture.
Mix together the sauerkraut, eggs, flour, green onions, salt and pepper until combined.
Heat a small amount of oil over medium heat in a heavy skillet until sizzling. Drop 1/2 cup of sauerkraut mixture into the pan and flatten with spatula. Fry for two minutes per side or until browned and crispy.
Served as a side dish with sausages or ribs.
