Farro Salad with Fruit and Feta

  • 4 cups cooked and cooled farro
  • 1 cup seasonal berries (blueberries, raspberries, blackberries, sliced strawberries)
  • 1 cup diced apple
  • 1 cup sliced grapes
  • 1 cup diced celery
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped walnuts
  • 1/4 cup diced red onion
  • 3 tablespoons minced Italian parsley
  • 1/3-1/2 cup prepared Balsamic or raspberry vinaigrette


Gently toss all ingredients together in a bowl and chill until ready to serve. 

Delicious on its own or served over greens.
