Curried Roasted Cauliflower

  • 2 tablespoons olive oil
  • 2-3 teaspoons curry powder
  • 2 cloves minced garlic
  • 1/2 teaspoon kosher salt
  • 1 pound cauliflower florets


Preheat oven to 425°F.
Combine olive oil, curry powder, garlic and salt.
Toss with cauliflower to coat.
Place in a single layer on a baking sheet.
Bake for about 25 minutes, stirring once halfway through, tender and slightly browned.

This is a great side for any Indian dish.
