Caprese-Style Salmon

  • 4 (6-8 ounce) salmon fillets, skinned and pin-boned
  • Olive oil
  • Salt and freshly ground black pepper
  • 2 cups halved cherry tomatoes
  • 3 tablespoons fresh basil, thinly sliced
  • 1 1/2 cups thinly sliced mozzarella
  • 1 cup grated Parmesan cheese


Preheat oven to 425°F.
Grease a large, shallow roasting pan.
Mix together olive oil, salt and pepper and rub all over salmon.
Top with tomatoes, basil, mozzarella and Parmesan.
Bake, uncovered, for about 15 minutes or until firm and cheese is bubbly and lightly browned.
