Baby Bok Choy with Mushrooms

  • 1 tablespoon sesame oil
  • 1 tablespoon peanut oil
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 8 baby bok choy, cut in quarters and washed
  • 1 1/2 cups sliced shiitake or cremini mushrooms
  • 4 tablespoon oyster sauce
  • 1/4 cup water
  • 1 teaspoon cornstarch mixed with 2 tablespoons water


Heat oils in a wok or large skillet over high heat. Add garlic and ginger – stir-fry for 20 seconds. Add bok choy and mushrooms – stir-fry for 2 minutes. Add oyster sauce and water. Cover and cook for 3 minutes. Remove vegetables to a warm serving platter. Stir the cornstarch mixture into the pan sauce, cook for another minute if needed to thicken, and then pour over the vegetables.
