Essential Baking Company

With a core purpose that calls for nourishing the body and soul of their community, and core values that include words like passion, integrity, authenticity and environmental and social responsibility – it’s natural that we are longtime partners with The Essential Baking Company of Seattle.

You can find, in our Bakeries, the artisan breads, baguettes, rolls, crackers, dessert and pastries created by the Essential Baking Company. They also offer products to restaurants, cafes, schools and hospitals throughout the Northwest. They now offer gluten-free breads and rolls, as well.

According to Essential’s President Tom Campanile, what makes Essential special is “there is a lot of passion in this company…on the shop floor, in our bakers and pastry chefs,” and you can taste that passion in their products.

Founded in 1994 by George DePasquale and the late Jeff Fairhall, the venture began with selling George’s signature breads at the Fremont Farmers’ Market. In 1998, the bakery began operating in Wallingford and they opened their first bakery café. In 2000, they joined forces with Parisian Star Desserts, founded by French native Pierre Fauvet, and entered the dessert business.

In 2010, after growing out of the old bakery, they relocated to the Georgetown neighborhood in south Seattle, where they are operating today. George’s passion for the work has led to his teaching bread and pizza-making classes around the city. What gets DePasquale most excited these days is training new people the art of bread and pastry making. With his dedication to the artisan process, it’s no wonder Essential has had such success. They now employ more than 200 people and are “Seattle’s biggest small bakery.”

Their commitment to environmental and social responsibility is very much who they are – their delivery fleet is fueled by biodiesel, and their bakery is (and always has been) organic. They don’t use anything made with synthetic additives, toxic chemicals or genetically modified organisms. Essential Baking Company donates fresh bread daily to community food banks and shelters. They also make in-kind donations to non-profit organizations that work on environmental and social causes, outreach and education such as Fare Start and Camp Korey.
