Ingredients

  • 2 cups peeled, diced seedless watermelon
  • 2 tablespoons diced sweet yellow onion
  • 1 tablespoon diced poblano pepper (or 1 teaspoon diced jalapeño pepper)
  • 1/2 cup diced sweet yellow or orange pepper
  • 1 1/2 teaspoons chopped garlic
  • 1/2 cup chopped cilantro
  • Juice of 2 limes
  • 1 teaspoon grated lime zest
  • 2 tablespoons olive oil
  • 1/2 teaspoon mild chili powder
  • Salt to taste
  • Freshly ground black pepper to taste

Directions

Combine all ingredients in a large bowl.
Stir gently and season with salt and pepper.
Allow to sit for at least 20 minutes for flavors to develop.

Serve simply with chips, or on fish for a delicious twist!
