Thyme-Seasoned Turkey Breast

  • 1 tablespoon dried thyme leaves
  • 1/2 cup olive oil
  • 2 teaspoons coarse salt
  • 1 teaspoon freshly ground black pepper
  • 1 (8 pound) turkey breast, washed and patted dry
  • 4 stalks celery, coarsely chopped
  • 2 medium onions, coarsely chopped


Preheat oven to 325°F.
Mix together thyme, oil, salt and pepper. Rub over all sides of turkey breast.
Place onions and celery in a roaster. Place seasoned turkey, breast side down, on top of vegetables and roast until about halfway through cooking process.
Turn and finish cooking, basting with accumulated juices, until thermometer inserted in thickest part registers 170°F, about 3 - 3 1/2 hours.
Let rest 10 minutes before carving.
