- 1 (5 ounce) bag mixed greens
- 1/3 cup thinly sliced sweet onion
- 1 large avocado, sliced
- 8 large strawberries, hulled and sliced
- 1 pound smoked salmon
- 3 tablespoons orange juice
- 3 tablespoons lime juice
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1/3 cup avocado oil or light olive oil
Divide greens, onion and avocado between 4 plates. Add 2 sliced strawberries to each plate. Divide salmon into 4 pieces and add to center of each plate.
To make the dressing, add orange and lime juices, honey and mustard to a small mixing bowl. Stir until combined.
Using a whisk, slowly pour in oil with one hand while whisking with other hand to emulsify dressing.
Add salt and pepper to taste and drizzle dressing over salads.
Note: this makes just enough dressing for 4 salads, so double the recipe if you like a lot of dressing. Croutons or toasted nuts make a great addition.
