- 2 pounds (approximately) baby Yukon Gold or red potatoes (smaller are best)
- 1 tablespoon kosher salt
- Olive oil, duck fat, lard or bacon grease
- Your favorite seasoning blend, herb blend or just kosher salt and freshly ground pepper
Place potatoes in a pot of cool water with salt.
Bring to a boil and cook for 10-15 minutes or until a knife inserted gives little resistance. Do not overcook.
Drain potatoes and cool slightly.
Smash slightly with palm of your hand. Potatoes should mostly stay together.
Place in a hot, heavy pan coated with oil or fat.
Sprinkle with desired seasonings.
Cook for about 4 minutes without turning, or until very crisp and golden brown.
Add more oil/fat if necessary. Lower heat slightly, then turn and season other side.
If using only salt and pepper, season immediately after potatoes are removed from pan.
