  • 1 4-pound, free-range, whole chicken
  • Olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, crushed
  • 1 bunch sage
  • 1 orange wedge
  • 1 carrot, cut in 3 pieces
  • 1 stalk celery, cut in 3 pieces


Preheat oven to 400°F.
Place chicken in a shallow roasting pan. Rub with oil and season with salt and pepper, inside and out.
Stuff chicken cavity with remaining ingredients.
Bake for 45-60 minutes, or until internal temperature reaches 165°F.
Cover with foil if chicken starts to get too browned.
