- 1 4-pound, free-range, whole chicken
- Olive oil
- Salt and pepper to taste
- 4 cloves garlic, crushed
- 1 bunch sage
- 1 orange wedge
- 1 carrot, cut in 3 pieces
- 1 stalk celery, cut in 3 pieces
Preheat oven to 400°F.
Place chicken in a shallow roasting pan. Rub with oil and season with salt and pepper, inside and out.
Stuff chicken cavity with remaining ingredients.
Bake for 45-60 minutes, or until internal temperature reaches 165°F.
Cover with foil if chicken starts to get too browned.
