Ingredients

  • 1 avocado, peeled and seeded
  • 1 cup low-sodium vegetable stock
  • 1 green onion
  • 1/2 bell pepper, any color
  • 1 cucumber, seeded
  • 2 cups baby spinach
  • 1 clove garlic
  • 1 1/4 inch slice ginger, or to taste
  • 1 tablespoon liquid aminos, or to taste
  • Juice of 1 lemon or lime
  • 1/2 teaspoon ground coriander

Directions

Puree all ingredients in a food processor.
Season to taste.
Eat cool.

This soup is very good for energy and vitality! Enjoy whenever your body feels run down or nutrient deprived.
