- 4 5-ounce salmon fillets, skinned
- 3 tablespoons chopped fresh thyme
- 8 thin slices prosciutto
Preheat oven to 400°F.
Sprinkle fish with salt and pepper. Sprinkle thyme on each fillet.
Place 2 slices prosciutto on work surface, slightly overlapping each other.
Place fillet crosswise in center of prosciutto. Fold prosciutto over fillet. Repeat with remaining prosciutto and fillets.
Heat oil in a medium, ovenproof skillet over medium-high heat. Add fillets, seam side down.
Cook 2 minutes per side, turning once, until prosciutto is browned on all sides.
Transfer skillet to oven and roast until cooked through, about 10 minutes.
