Mixed Greens with Blueberries, Feta and Almonds

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 4 cups salad greens
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh blueberries
  • 1/4 cup slivered almonds, toasted


In a small bowl, whisk together the oil, vinegar and honey. Season dressing to taste with salt and pepper. Place 1/4 of the greens on each of four plates. Top each plate evenly with blueberries and feta. Drizzle with dressing and sprinkle with almonds.
* To toast almonds, preheat oven to 350°F. Place in a single layer in small baking pan and toast about 10 minutes or until lightly browned. Cool.
