- 2 cups fresh mango, peeled and diced into 1/2-inch pieces
- 2 cups fresh pineapple, diced into 1/2-inch pieces
- 1/2 cup sweet red pepper, diced
- 1/2-1 jalapeño, ribs and seeds removed, minced
- 2 scallions (white and green parts), thinly sliced
- 1/3 cup chopped fresh cilantro
- 1 clove garlic, minced
- Juice of 1 lime
- Kosher salt to taste
Place all ingredients in a medium-sized, non-reactive bowl.
Mix to combine and refrigerate for 1 hour before serving.
