Irish Cheddar and Stout Fondue

  • 1 pound Irish cheddar cheese, grated
  • 2 1/2 tablespoons flour
  • 3/4 cup Irish stout beer (or more)
  • 1/4 cup apple cider
  • 2 tablespoons Dijon mustard
  • Salt and freshly ground black pepper


Toss cheese with flour to coat.
Bring stout, cider and mustard to a simmer in a saucepan. Gradually add cheese, stirring constantly, until melted.
Thin fondue with extra stout if desired. Season to taste with salt and pepper.
Transfer to fondue pot to keep warm.
Serving suggestions for dipping include: apple wedges, steamed vegetables, sausage and bread cubes.
