Green Corn Tamale Casserole

Ingredients

  • 3 cups fresh or frozen corn
  • 1/3 cup yellow cornmeal
  • 2 tablespoons butter, melted
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 cup cheddar Cheese, shredded
  • 1 (4 ounce) can whole green chiles

Directions

Preheat oven to 350°F. Grease a 1-quart baking dish.
Combine corn, cornmeal, butter, sugar and salt in a blender or food processor.
Grind until corn is finely chopped.
Layer half of corn in a baking dish.
Top evenly with chiles and cover with cheese.
Top with remaining corn mixture.
Cover and bake for 1 hour.
