- 3/4 pound crab meat*
- 1/4 cup aioli or mayonnaise
- 4 English muffins
- 8 slices tomato
- 8 slices cheddar cheese
Combine crab meat and aioli in a mixing bowl and gently stir together.
Heat broiler to high and place an oven rack in the upper third of the oven. Split English muffins and place on a baking sheet. Broil until lightly toasted.
Remove from oven and divide crab evenly between muffins. Top each with a slice of tomato and a slice of cheddar cheese.
Return to oven and broil to melt cheese. Serve warm.
*2 pounds of cooked whole crab will yield about this amount.
