  • 1/2 cup plus 1 tablespoon mayonnaise, divided
  • 1/2 cup crumbled blue cheese
  • 1 large avocado, mashed
  • 8 large slices whole wheat sandwich bread, toasted
  • 1 pound thick-sliced roasted turkey breast
  • 8 slices thick-cut pepper bacon, cooked
  • Thinly sliced tomatoes


Stir together 1/2 cup mayonnaise and blue cheese. Refrigerate until ready to use (best if done at least 30 minutes ahead; can be done up to 24 hours ahead).
Stir remaining mayonnaise into avocado.
Lay out 4 bread slices and spread with avocado.
Top with turkey, bacon, and tomatoes.
Spread remaining bread with mayonnaise and place on top of sandwiches.
Cut and serve.

Packing a picnic? Wrap tightly in plastic and keep in a cooler until ready to serve.
