Black Bean, Corn and Edamame Salad

  • 2 cups frozen edamame, thawed
  • 2 cup fresh corn (or frozen corn, thawed)
  • 1 15-ounce can black beans, rinsed and drained
  • 1/4 cup diced sweet onion
  • 1-2 tomatoes, diced
  • 1/3 cup your favorite vinaigrette salad dressing (or to taste)
  • 1/3 cup chopped cilantro
  • Salt and pepper to taste


Combine all ingredients in a bowl and toss to combine.

Chicken or shrimp turns this salad into a complete meal.
