- 2 cups frozen edamame, thawed
- 2 cup fresh corn (or frozen corn, thawed)
- 1 15-ounce can black beans, rinsed and drained
- 1/4 cup diced sweet onion
- 1-2 tomatoes, diced
- 1/3 cup your favorite vinaigrette salad dressing (or to taste)
- 1/3 cup chopped cilantro
- Salt and pepper to taste
Combine all ingredients in a bowl and toss to combine.
Chicken or shrimp turns this salad into a complete meal.
