Ingredients

  • 2 avocados, mashed
  • 1 lemon, juiced
  • 1/2 red onion, diced
  • 1 tomato, diced
  • 12 slices thick-cut bacon
  • 4 (4- to 6-oz.) salmon fillets
  • Salt and pepper to taste
  • 1/2 cup mayonnaise, divided
  • 4 whole-wheat buns, toasted

Directions

Mix mashed avocado, lemon juice, red onion and diced tomato in a small bowl; set aside.
Cook bacon in heavy skillet over medium heat until crisp. Transfer bacon to a plate lined with a paper towel to drain. Reserve about 3 tablespoons bacon drippings in skillet. Season salmon with salt and pepper and pan-fry in skillet until just cooked through, about 3-4 minutes per side.
Spread mayonnaise over toasted buns. On bottom bun, layer cooked salmon, avocado mixture, two slices bacon and top bun. Serve warm.
